Creative Apple Crumble

The time it takes to put together this dish is pretty much the time it takes to prepare your apples–and its very easy. It’s also a great way to deal with a bunch of apples you have sitting around!

Apple Filling
Apples, peeled and sliced (6-8; I used a mixture of Galas and Granny Smiths to balance sweet and tart)
Brown Sugar (1/2 cup)
Cinnamon (1 tsp or more)
Nutmeg (dash)

Crumble Topping
Flour (1/2 cup)
Nature Valley Crunchy Granola Bar, Oats and Honey Flavor (1 bar–use 2 if you love oats)
Brown Sugar (1/2 cup)
Butter (1/2 cup for tasty version, 1/4 cup for healthy version)

Preheat the oven to 350F.

Once your apples are peeled and sliced, start assembling your topping. First you need to break down the granola bar. I used a blender, which took about 2 seconds, but a food processor, mortar & pestle, or anything really would work. Combine the result with the flour and brown sugar. Then place the whole chunk of butter (NOT melted) in with your dry ingredients. Use you fingers to break down the chunk and combine little pats with the flour mixture. When you’re finished you will have many little butter/flour lumps, which is just what you want.

You’re almost done. Place the apple slices in an even layer in a baking dish. Pour a mixture of brown sugar, cinnamon, and nutmeg on top. Toss so that the apple slices are evenly coated. Next, pour the crumble mixture on top of the apples, making sure all apples are covered.

Place in the oven, covered, for 15 minutes. Then uncover and bake again for a further 30 minutes to brown the crumble. Enjoy!

Sprinkle Cake Cookies

These are crazy delicious. If you love funfetti cake, you will love these cookies even more!

Flour (3/4 cup)
Funfetti Cake Mix (1 1/4 cup)
Baking Soda (1/4 tsp)
Butter, softened ((3/4 cup)
Egg (1 large)
Egg Yolk (1 large)
Vanilla (2 tsp)
Sugar (1/2 cup)
Brown sugar (1/2 cup)

Cream together the butter and sugars. Mix in the egg yolk, egg, and vanilla until creamy. Add in the flour, cake mix, and baking soda. Refrigerate for at least an hour.

Preheat oven to 350. Scoop heaping tablespoons of dough onto cookie sheets. Bake for 12-15 minutes, until the edges are golden.

Scalloped Cauliflower

Cauliflower, chopped and steamed (1 head)

White Sauce
Butter (4 tbsps)
Flour (4 tbsps)
Milk (2 cups)
Nutmeg (1/4 tsp)
Dijon Mustard (1 tbsp)

Bread or Cracker Crumbs (1/2 cup)
Cheeses, such as cheddar, parmesan, gouda, havarti (1/2 cup to 1 cup, depending on your desired cheeziness level)
Paprika
Cayenne Pepper

Preheat oven to 350F and steam the cauliflower. While the cauliflower is steaming, prepare the white sauce. Melt the butter in a pan and whisk in the flour until blended and smooth. Remove the pan from heat and slowly whisk in the milk. Return the pan to the heat and bring to a simmer, whisking constantly, until the sauce has thickened. Add nutmeg, mustard, and 1/4 cup or more crumbs.

Drain the cauliflower and place in casserole dish. Spoon over white sauce. Top with cheese, crumbs, paprika and cayenne. Bake until bubbly and browned on top–about 25 minutes.

Our Wedding Butternut Sage Lasagna

FILLING (11×15 pan):
Onions (2 large)
Garlic (8 cloves)
Butternut Squash (1 large, peeled and cut into ¾ in. cubes)
Mushrooms (sliced)
Sage (large bunch, chopped fine)
Nutmeg (1 tsp or more)
Pepper (to taste)
Salt (to taste)
Parsley (Optional)
Chili flakes (Optional)
Lasagna noodles (oven-ready)
Parmesan/Hard Cheese (2 cups grated)
Mozzarella/Cheddar/Soft Cheese (4 cups grated)

SAUCE:
Butter (½ cup)
Flour (1/3 cup)
Milk (5 cups)
Chili Powder (Optional)
Nutmeg (to taste)
Salt (to taste)

FILLING: First caramelize the onions in butter or olive oil, then add the mushrooms and cook until tender. Add salt, pepper, parsley, sage, nutmeg, chili flakes, garlic cloves and squash. Sauté until squash is tender and edible.

SAUCE: Melt butter in a saucepan, then add flour and whisk until a wet paste forms and cook over low heat for 2 minutes. Add milk and whisk; simmer for 15-20 minutes, stirring occasionally. Add pepper, chili powder and nutmeg. If the sauce hasn’t thickened enough, add a tablespoon or two of flour and make a paste of it with a small amount of cold milk, working out all lumps, and gradually add a little more milk to dissolve it and then add it to the sauce. Take care not to burn the milk. Sauce will thicken as it cools.

ASSEMBLY: Lay down a base layer of sauce into your lasagna dish. Then stack up the layers as follows: noodles +filling + cheese+ sauce + noodles + filling + cheese+ sauce+ noodles, etc. Cover the top layer with your final sheet of noodles, and add a generous helping of sauce and cheese to the top. Garnish with paprika. Bake at 400 F for 30-45 minutes, until the noodles are cooked and the top is browned.

Shepherd’s Pie

Ground Beef AND/OR Lamb (1.5-2 lbs)
Onion (1 medium, minced)
Carrots (2 medium, minced in food processor)
Garlic (4 large cloves, minced or pressed)
Ketchup (2 tbsps)
Flour (1/4 cup)
Worcestershire Sauce (2 tsps)
Frozen Peas (1/2 cup or more)
Canned Corn (1 can) OR Frozen Corn
Russet Potatoes (4 medium, cubed)
Heavy Cream (1/2 cup)
Cheddar Cheese (shredded)
Butter (2 tbsps)
Green Onions
Chives
Paprika
Parsley
Thyme
Rosemary
Salt
Pepper

Brown the ground beef in a skillet, breaking up the meat, until the meat is cooked. Set the meat aside. Keep some of the fat in the pan.

Meanwhile, get the water boiling for the potatoes. Add salt to the water. Bring to a boil then simmer until the potatoes are tender.

Saute the onions, carrots, and salt in the rendered fat until soft. Add in the garlic, ketchup, and flour. Stir in the Worcestershire sauce, your choice of herbs, and green onions and cook until the mixture has thickened and the flour has absorbed, about 2 minutes. Turn of the heat and add the frozen peas and season with salt and pepper. Pat the meat in a layer of a casserole or baking dish. If you like a thick layer of meat, use a casserole; if you like a thinner layer, use a baking dish or roasting pan.

Now you need to mash the potatoes. Drain them and mash them, with or without skins–your preference. I used a potato ricer, because that produces the best result. Stir in butter, cream, salt, pepper, and chives until the potatoes are the desired consistency.

Over the layer of meat in the dish, add a layer of corn one kernel thick. Then carefully dollop mashed potatoes onto the dish and spread with a spatula. Sprinkle top with cheddar and paprika.

Bake at 450 until the edges are bubbling and browning for about 30 minutes.

Yummy Yummy Beef Stew

Most stews are pretty blah and bland. This one you can’t get enough of! Pretty simple too, if you have the ingredients on hand.

Dried Porcini Mushrooms, rinsed well (3/4 oz.)
Beef for stew (chuck), cut into 2-inch chunks (2.5 lbs)
Olive Oil (1/4 cup)
Carrots, peeled, cut into 1-inch thick rounds (4 large)
Onions, cut into 1/8-inch slices (2 medium)
Potato, cut into 1-inch thick chunks OR Butternut Squash, cut into 1-inch thick chunks (1 potato or squash)
Garlic, sliced thin (8 cloves)
Tomato Paste (2 tbsps)
Flour (1/3 cup)
Red Wine (1 bottle)
Chicken Broth (1 cup)
Salt (1.5 tsps)
Pepper (1 tsp)

EQUIPMENT
Large cast iron pot/dutch oven
(This recipe is not suitable for a slow cooker)

Cover mushrooms with 1 cup hot tap water in small microwaveable bowl; cover with plastic wrap, cut a few steam vents, and microwave for 30 seconds. Let stand until mushrooms soften, at least five minutes (just leave them soaking until you’re ready for them). When it’s time to put them into the stew, you’ll need to take the mushrooms out of the liquid with a fork and chop them into pieces–you should have about a quarter cup. Then strain the liquid though a paper towel into a bowl–you’ll be adding this along with the mushrooms to the stew.

Adjust your oven rack to the lower middle position and pre-heat oven to 325 degrees.

Dry beef thoroughly with paper towels, then season with salt and pepper. Heat 2 tablespoons oil on med-high heat in the large heavy pot you’re going to use for the stew. When the oil is shimmering, add beef so it covers the bottom in one layer without crowding. Cook without moving the pieces until its well browned on both sides–this will take about 10 minutes per batch. Transfer the browned beef to a holding bowl and repeat with the rest of the beef and oil until it has all been browned. Leave the remaining oil in the pot.

Reduce heat to medium and add carrots, onions, garlic, potato/squash, and tomato paste to the pot you used for browning the beef. Cook, stirring occasionally, until light brown (about 2 minutes). Stir in flour and cook, stirring constantly, about 1 minute. Slowly add wine, gently scraping pot bottom to loosen browned bits. Add the broth, beef, and juices in bowl. Increase heat to med-high and bring to full simmer. Add mushrooms and their liquid.

Cover pot with lid and place in oven. Cook until beef is very soft, 2.5 to 3 hours. Let sit for 5 minutes after you take it out of the oven.

Toffee Nut Cake

Brown sugar (2 cups)
Butter, salted (1/2 cup)
Eggs (2 medium)
Vanilla (1 tsp) *Optional*
Flour (1 cup)
Toffee Bits (1/4 cup)
Pecans (1/4 cup)

Preheat oven to 350F. Melt brown sugar and butter on the stove or in the microwave until the sugar is dissolved–this takes about 2-3 minutes. Add the eggs and vanilla and beat until the mixture becomes smooth and very viscous. Stir in the flour. Once mixed thoroughly, add in the toffee bits. Pour the mixture into a 9×9 inch greased cake pan, then add the pecans on the top so they get nice and toasty in the oven. Bake for 20-30 minutes or until browned on the edges and a toothpick through the middle comes out clean.

Wolfgang Puck’s Hearty Potato & Cheddar with Bacon Soup

Bacon, chopped (1/4 lb)
Butter (1/4 cup)
Leeks, chopped (2 small)
Onion, diced (1 large)
Carrot, peeled, chopped
Garlic, minced (1 clove)
Flour (1/2 cup)
Chicken Broth (6 cups)
Russet Potatoes, peeled, cut into 1/2 inch cubes (3 lbs)
Sharp Cheddar, grated (1 lb)
Salt (1/3 tsp)
Pepper (1/4 tsp)
Whipping Cream (1 cup)

In a large saucepan cook bacon over medium-high heat until crisp. Remove with slotted spoon, set aside. Drain all but 1 tablespoon drippings. Add butter and melt.

Add leeks, onion, carrots and garlic and cook for 5 minutes. Stir in flour. Gradually stir in chicken broth.

Add potatoes. Bring to a boil. Reduce heat, cook partially covered for 15 minutes or until potatoes are tender.

Place cheese in a large mixing bowl. Stir in about a quarter of the hot soup, mixing until smooth. Return cheese mixture to saucepan.

Gradually stir in heavy cream, salt and ground pepper. Continue to heat soup until almost boiling.

Brown Butter Macadamia Cookies

Flour (1 3/4 cups)
Baking Soda (1/2 tsp)
Butter (1 3/4 sticks or 14 tbsps)
Sugar (1/2 cup)
Brown Sugar (3/4 cup, packed)
Salt (2 tsp)
Vanilla Extract (1 tsp)
Eggs (2 large)
Macadamia Nuts (3/4 cup)

Preheat oven to 375F. Whisk flour and baking soda together in medium bowl; set aside.

Heat 10 tablespoons butter in 10-inch skillet over medium-high heat until melted, about 2 minutes. Continue cooking, swirling pan constantly until butter is dark golden brown and has nutty aroma, 1-3 minutes. Remove skillet from heat and, using heatproof spatula, transfer browned butter to large bowl. Stir remaining 4 tablespoons butter into hot butter until completely melted.

Add both sugars, salt and vanilla to bowl with butter and whisk until fully incorporated. Add eggs and whisk until mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand for 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth and shiny. Using rubber spatula or wooden spoon, stir in flour mixture until just combined, about 1 minute. Stir in nuts.

Divide dough into 16 portions, each about 3 tablespoons. Arrange 2 inches apart on prepared baking sheets, 8 dough balls per sheet.

Bake cookies 1 tray at a time until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, 10-14 minutes, rotating baking sheet halfway through baking. Transfer baking sheet to wire rack; cool cookies completely before serving.
